A James Beard Award semifinalist is bringing his cult-favorite bagel shop to downtown Birmingham.

Chef Max Sussman, a Huntington Woods native and cookbook author, plans to open Bev's Bagels at 283 Hamilton Row in September. The 1,400-square-foot storefront, previously home to Marrow on the Go, will serve the same hand-rolled organic sourdough bagels that built a devoted following at the original Detroit location.

"I've always loved hanging out and eating in Birmingham," Sussman said in a news release reported by Deadline Detroit. "When I was growing up, I'd go there with my grandparents for lunch all the time. It's really exciting to me to be able to bring Bev's to downtown Birmingham and introduce what we do to a whole new audience."

Sussman earned a James Beard semifinalist nod for Rising Star Chef of the Year in 2012 while working as a chef at Roberta's, the celebrated Brooklyn pizzeria. He returned to Michigan in 2020 and launched Bev's Bagels in 2023 as a home-kitchen pop-up named after his grandmother. The concept, which pays homage to his family's Jewish heritage, grew quickly into a brick-and-mortar "bagel diner" in Detroit's Core City neighborhood at Grand River and West Warren.

The bagels are hand-rolled, proofed overnight in the refrigerator, boiled and finished in the oven. The result is a crispy exterior with a chewy center, paired with wild-caught fish and creative schmears. The Detroit Free Press reported the Birmingham menu will also include location-specific items.

Sussman told the Free Press he plans to double weekday production at the Birmingham shop without compromising quality. He won't shrink the menu or pre-make food to get there.

The Birmingham location will be open 7 a.m. to 3 p.m. daily. A third Bev's Bagels is also under development in Ann Arbor.
